December 4th?!?! How?? How is this possible?? It feels like time is just racing by and I’m stuck here in slow-mo-ville not getting anything done. I love, love, love Christmas time…decorating, shopping and wrapping gifts for loved ones, baking (especially this), etc. But I’ll be damned if I can’t get it together this year. I’m excited, but feeling a bit bah humbug at the same time, if that’s possible. I want to be excited and to get it all underway, but feeling a bit too overwhelmed by everything else going on to really get into it. Don’t get me wrong, I’m not complaining…a lot of good things are happening, but a lot of changes at once means a lot of chaos.
Thanksgiving was fantastic…J and I celebrated with his family the Sunday before and my family Thanksgiving day. He got to meet my brothers and their families and we had a nice time. The next day we began the process of moving him to our new home 🙂 It took a bit longer than we had anticipated, which resulted in a good bit of exhaustion come Monday morning. Thankfully he has some great friends that helped us load and unload the U-haul, but now it’s all on us to get it all unpacked, put away/organized.
He’s jumped head-first into working on all the (many) projects that need to be done at the house and here I am struggling to even get boxes unpacked. So unlike me!! Maybe it’s the ever-changing Texas weather…30 degrees one day, 80 the next; sunny one day, dreary the next, and so on. Today the high is 84, tomorrow…dropping into the 30s. Come ON Mother Nature…you’re killin’ me! Maybe I’ll feel more in the spirit of Christmas once we finally get the tree and decorations up at home…whenever we can find time for that!
In the mean time, amidst the chaos and me just enjoying having my honey home at last, I have still managed to cook supper most every night. Now, taking pictures and getting them posted…well, as you can tell from the virtual crickets around here, I haven’t been so great about that. But I’m here with one today, and it’s a goodie for sure! Very simple, and I got to utilize that great big rosemary bush in my front yard. Score!
Ingredients
- 2 garlic cloves, minced
- 1 Tbsp fresh, chopped rosemary
- 4 6-oz salmon filets
- 1/8 tsp sea salt
- 1/8 tsp black pepper
Preparation
- Preheat oven to 425°, line a baking sheet with foil and spray with cooking spray.
- Place salmon on prepared baking sheet, season with salt & pepper, then evenly distribute the rosemary and garlic among the four filets.
- Bake for 12 minutes or until salmon is cooked through.
