Smoked Gouda & Cheddar Mac N Cheese

With both smoked gouda and smoked cheddar, this creamy, Smoked Gouda & Cheddar Mac N Cheese will be a family favorite that you will make over and over again!

If you’re anything like me, you grew up on blue box mac and cheese. And you loved it. Because, really, it’s all we knew. And hey, I’m not knocking it, because it’s plenty good. But. It’s not homemade mac and cheese good. It’s not creamy, delicious mac and cheese. And it’s definitely not smoky, creamy mac and cheese.

This mac and cheese is the creamiest. And it’s made with smoked gouda and smoked cheddar. And again, if you’re anything like me, you love smoked cheese. Smoked gouda is my #1 favorite kind of cheese, no contest.

I’ve made a few versions of mac and cheese in my day, including my Pumpkin Mac N Cheese, but this Smoked Gouda & Cheddar Mac N Cheese, is by far the best I’ve ever had. And, it’s easy to make. Truly.

How to make Smoked Gouda & Cheddar Mac N Cheese

1.) In a large microwavable bow or small saucean, heat milk in until just warm. Do not boil! Set aside and keep warm.
2.) Fill up a large pot with salted water. Bring to a boil and add uncooked pasta noodles. Cook until al dente, according to package instructions (usually about 8-10 minutes.) Drain in a colander and return to the pot.
3.) Meanwhile, in a medium saucepan, melt butter. Add flour and whisk constantly for about 4 minutes or until it is golden and completely smooth. 4.) Add warm milk and whisk until thick and bubbly. Add salt, pepper, mustard, and cheeses. Stir until cheeses are melted and sauce is smooth and creamy.
5.) Use a spatula to push the cheese sauce into the pot with cooked pasta and stir until well coated.
6.) Serve immediately with chopped parsley, if desired.

The cheese sauce is creamy, smoky and the most delicious sauce you have ever had. Try to contain yourself and not slurp it all up with a spoon. I promise, it will be just as good mixed with the pasta.

You can use whatever short pasta you like. I used cavatappi, because I just love the corkscrew shape. It’s fun, and a nice change from regular macaroni noodles.

Stir it all together, serve it up with some minced parsley, and devour it immediately. This is definitely best served right away. Of course you can reheat any leftovers – if there are any – but it will be the most creamy and delicious right if eaten right away.

Ingredients

  • 2 3/4 cups whole milk
  • 4 Tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp mustard powder
  • 2 cups smoked gouda cheese, freshly grated
  • 2 cups smoked cheddar cheese, freshly grated
  • 2 1/2 cups uncooked short pasta noodles (elbow macaroni, cavatappi, penne, rotini, etc.)
  • chopped parsley, for topping (optional)

Instructions

  • In a large microwavable bow or small saucean, heat milk in until just warm. Do not boil! Set aside and keep warm.

Notes

*A spatula will allow you to get all of that cheesey goodness out of the saucepan and into the pasta!
