Mashed Sweet Potatoes with Bacon and Chives are a spruced up, savory version of a holiday favorite that everyone will love!
I’ve never been a fan of the holiday sweet potato dish covered in marshmallows. As much of a sweets-lover as I am, that’s just too much sweet for me in a non-dessert dish. This savory Mashed Sweet Potatoes with Bacon and Chives, however, I can totally get behind. I’m usually a regular mashed potatoes kinda girl, but I really, really love this sweet potato version. It’s creamy with a little bit of crunch in every bite and absolutely delicious. You can bet that it will be making regular appearances at all future Thanksgiving holiday dinners. AND! It’s not just for holidays – you can enjoy this side dish year-round, if you want! It goes great with ham, chicken, even meatloaf! Yes, I said it.
If you love sweet potatoes (even the sweet versions), you will quickly fall in love with this dish. And if you have friends or family members that turn up their noses at the marshmallow-topped side dish, then this just may be the way to get them filling their plates with delicious sweet potatoes this holiday season!

- Sweet potatoes
- Salt & Pepper
- Green Onions or Chives
- Crispy Bacon
- Garlic
- Sour Cream
- Butter
How to make Mashed Sweet Potatoes with Bacon & Chives

- Place the cubed sweet potatoes in a large pot or Dutch oven and add enough water to cover by about 1 inch. Add 1/2 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are fork-tender, about 9 to 12 minutes.
- Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
- Add the most of the green onions and bacon – reserving a little for garnish if desired, and the garlic. Stir to combine. Next, stir in the sour cream, all of the butter, and the remaining 1/2 teaspoon of salt and pepper. Taste and season with additional salt and pepper if desired.
- Transfer to a serving bowl and top with additional green onions and bacon, if desired. Serve immediately or store in an air-tight container for up to 3 days. If storing, wait to add garnishes until serving.

- 6 slices bacon, cooked crisp and crumbled

- ¼ cup sour cream
- 3 Tbsp butter, cubed
