This is one of those super simple side dishes that I feel silly posting because there isn’t much of a “recipe”, but it’s just too yummy not to share! I love, love, love vinegar-y things, so this was definitely one of those side dishes that I wanted to devour every last bite of.
And, the colors are so bright and summery it helps distract me from the temperature dropping as Fall creeps up on us. I’m just not ready for summer to be officially over yet!!
Cucumber, Tomato, Spinach & Dill Salad
Adapted from The Daily Meal
Ingredients
- 1 cucumber, halved lengthwise then cut into 1/4-inch-thick half-moons
- 1/2 pint of cherry tomatoes, halved
- 2 Tbsp white vinegar
- 1 Tbsp dried dill
- 1 Tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 oz spinach
Preparation
- In a large bowl, combine the cucumber, tomatoes, vinegar, dill, oil, salt & pepper.
- Add in the spinach, stir to coat, and serve!
