This Chicken Salad with Blackberries, Golden Beets, Feta and Avocado is a colorful, healthy salad that you will want to eat all year long!
Back in July, I spent a month doing Weight Watchers, to try and kickstart some weight loss. During that time, I tried quite a few recipes from their site, and found a few that I really enjoyed. This Chicken Salad with Blackberries, Golden Beets, Feta and Avocado was one of those recipes.
I have long been a fan of entree salads, and I especially like ones that have some sort of fruit in them. Blackberries being my favorite berry, this salad was right up my alley. I wasn’t sure how I’d feel about the golden beets, as I’m not typically a fan of red beets, but I remembered having a shaved beet dish in Georgia a few years back that I did like, so I decided to give it a go.
Every component of this salad was on point. The salad greens, the grilled chicken, blackberries, shaved golden beets, feta crumbles and tangy vinaigrette mix so well together with the flavors and textures. A little creamy, a little crunchy, a little sweet, and a little tangy.
J is a big fan of red beets, so I figured he would like this as well. I’m not sure how easy golden beets generally are to find, but I got lucky and found then on my first try. I love the color that they add to this salad, don’t you?!?
Not only is this salad gorgeous, it’s a quick and easy meal to make. While your chicken is cooking, you can slice (or shave) your beets, and slice your avocado. By the time the chicken is cooked, rested, and sliced, you only have to put the salad together! Assemble it all in one big bowl or platter, or in individual servings.

Chicken Salad with Blackberries, Golden Beets, Feta and Avocado
Ingredients
- ¼ cup minced shallots
- ¼ cup minced fresh tarragon
- ¼ cup champagne vinegar
- 3 Tbsp warm water
- 4 tsp olive oil
- ¾ tsp kosher salt
- ¼ tsp black pepper
- 5 oz spring mixed greens
- 2 cups cooked skinless boneless chicken breasts*, chopped or thinly sliced
- 1 medium avocado, thinly sliced
- 1 cup golden beets, shaved or thinly sliced
- 1 cup fresh blackberries
- 6 Tbsp crumbled feta cheese
Instructions
- In a medium bowl, whisk together shallots, tarragon, vinegar, water, oil, salt, and pepper; set aside.
- In a serving bowl, toss together greens, chicken, avocado, beets, berries, and dressing; sprinkle with cheese.
