Au Gratin Potatoes & Sunchokes is a rustic fall side dish that you will want to enjoy over and over again!

Au Gratin potatoes are a side dish that many know and love, and it’s a perfect side dish for the upcoming fall weather. Traditional Au Gratin uses thinly sliced potatoes, but I opted to make a more rustic version.
When I got my haul of fall produce from Melissa’s Produce, I was so excited! There were a lot of delicious veggies and fruits that I use regularly, but there was also one thing that I had never heard of before. Sunflower chokes (aka sunchokes). I looked them up, and after reading the description of the flavor profile and suggestions for how to use them, I knew that I was going to combine them with the baby Yukon gold potatoes and make a rustic version of Au Gratin Potatoes.
What is a sunchoke?
Sunchokes are a tubular-shaped vegetable, that look similar to ginger, but have an nutty, earthy flavor that resembles that of potatoes. They are a root vegetable of the sunflower family, and are delicious roasted are a great source of iron, calcium, magnesium, and potassium. These fiber-rich vegetables can be prepared and enjoyed much the same as you would potatoes – roasted, fried, mashed, or even raw! So many wonderful uses for this unique veggie!
What do you need to make Au Gratin Potatoes & Sunchokes?
Baby Yukon Gold Potatoes
Sunchokes
Heavy Cream
Sage
Butter
Garlic
Salt and Pepper
Parmesan Cheese
How to make Au Gratin Potatoes & Sunchokes:

1.) Preheat the oven to 400 degrees F.
2.) Halve the potatoes and cut sunchokes into 1-inch pieces and place in a large baking dish and season with salt and pepper.
3.) Meanwhile, put the cream, butter, sage, and garlic in a small saucepan and bring to a simmer over medium heat. Cook for about 5 minutes, to infuse the cream with flavor. Season with salt and pepper.
4.) Using a fine mesh strainer, pour the cream mixture over the potatoes, and disard the garlic and sage. Cover the top with the grated Parmesan and bake for 30 to 35 minutes, until the potatoes and sunchokes are cooked through and top begins to brown. Cover and keep warm until ready to serve.
