Blackened Salmon Kabobs with Yogurt Sauce

A few weeks ago at work, I found a cookbook laying on the table in the kitchen where people often leave things for anyone else to take. I thought surely it must have been left behind on accident after lunch so I walked around the office with it trying to find the owner, to no avail. I decided I would take it home that night and go through it then bring it back the next day in case the owner noticed it missing. It was a Sam’s Club cookbook, and I certainly did find some good looking recipes!! Of course, being a cookbook for a particular store, there are ingredients in it that you would have to buy at that store. I do have a membership, but figured I could improvise on some of the ingredients to come up with the same overall dish. It definitely worked out with this one!!

I am so thankful that J and I have (mostly) the same tastes in food. We both love spicy food, and fish, so blackened salmon was sure to be a successful dish. I debated making it in kabob form but at the last minute decided to do it, mostly because it was something different, and I like different 🙂
I was gentle with the blackened seasoning so that it wouldn’t be overpoweringly spicy and when I made the yogurt sauce I thought I’d died and gone to heaven. I usually buy the fat free Greek yogurt, but when I went grocery shopping they didn’t have anything but the “regular” version of the brand I like, so I decided to try it. Thank God I did. When I mixed in the lemon juice and zest it tasted just like lemon yogurt. Holy crap, how was I going to keep my spoon out of it and save it for dinner?!?! It took some serious will power my friends. Serious. Will power.
Oh, and I got to use the awesome grill pan that I got as one of my birthday presents from J a couple of weeks ago!! Just look at those grill marks!! All-in-all, a successful dinner!! I definitely suggest you fish/salmon lovers (or those on the fence) try this one ASAP.
Blackened Salmon Kabobs with Yogurt Sauce
Adapted from Fresh, Fast, and Fabulous Sam’s Club Cookbook
Ingredients
  • 1 cup plain Greek Yogurt
  • 1 tsp grated lemon zest
  • 1 Tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 pepper
  • 6 (12 in) Wooden Skewers
  • 4 (6 oz) Salmon Fillets (skinless)
  • 2+ Tbsp of Blackened Seasoning (use your discretion based on your tolerance for spiciness)
  • Cooking Spray
 
Preparation
  1. If grilling, soak wooden skewers in water for at least 30 minutes prior.
  2. Combine the Greek yogurt, lemon zest and juice, salt and pepper in a medium bowl and mix well. Refrigerate until ready to use.
  3. Preheat your grill or grill pan over medium-high heat (400 degrees on the grill). If using a grill pan, spray with cooking spray. If using a grill, spray the salmon skewers before placing on the grill.
  4. Cut the salmon into 1 inch chunks and thread onto the wooden skewers. Season all sides with blackened seasoning and grill for about 2 minutes per side, until cooked through.
  5. Remove and serve with yogurt sauce!
