Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 tsp vanilla
  • 2 ripe bananas, mashed
  • 1 cup chopped strawberries
  • 1 cup cinnamon baking chips
  • Extra strawberry slices and cinnamon chips for topping, if desired

Instructions

  • Preheat oven to 350F. Grease a 9 x 5 loaf pan and set aside.
  • In a small bowl, mix flour, baking soda, and baking powder. Set aside.
  • In a mixing bowl, cream butter and sugars. Mix in eggs, vanilla, applesauce, and mashed bananas. Stir in chopped strawberries and cinnamon chips.
  • Add flour mixture into the wet ingredients and mix to combine.
  • Pour into greased loaf pan (top with strawberry slices and cinnamon chips, if desired) and bake for 60-65 minutes, until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes in the pan before removing and cooling fully on a wire rack. Slice and enjoy!
