Ingredients
2 3/4cupswhole milk
4Tbspunsalted butter
1/4cupall-purpose flour
2tspsalt
1tsppepper
1/2tspmustard powder
2cupssmoked gouda cheese,freshly grated
2cupssmoked cheddar cheese,freshly grated
2 1/2cupsuncooked short pasta noodles(elbow macaroni, cavatappi, penne, rotini, etc.)
chopped parsley,for topping (optional)
Instructions
In a large microwavable bow or small saucean, heat milk in until just warm. Do not boil! Set aside and keep warm.
Fill up a large pot with salted water. Bring to a boil and add uncooked pasta noodles. Cook until al dente, according to package instructions (usually about 8-10 minutes.) Drain in a colander and return to the pot.
Meanwhile, in a medium saucepan, melt butter. Add flour and whisk constantly for about 4 minutes or until it is golden and completely smooth. Add warm milk and whisk until thick and bubbly. Add salt, pepper, mustard, and cheeses. Stir until cheeses are melted and sauce is smooth and creamy.
Use a spatula* to push the cheese sauce into the pot with cooked pasta and stir until well coated.
Serve immediately with chopped parsley, if desired.
Notes
*A spatula will allow you to get all of that cheesey goodness out of the saucepan and into the pasta!
