Chicken & Green Bean Casserole

Ingredients

  • 6 oz package Chicken stuffing mix (or use leftovers from the holidays!)
  • 1 Tbsp butter
  • 6 boneless, skinless chicken breasts
  • 1/2 tsp black pepper
  • 1/2 lb fresh green beans, trimmed, cut into 1-inch pieces
  • 1/4 cup flour
  • 1 3/4 cups chicken broth
  • 6 oz cream cheese, cubed

Instructions

  • Preheat oven to 400 degrees F. Spray a 9 x 13 casserole dish with cooking spray and set aside. 
  • Prepare stuffing according to package directions.
  • Meanwhile, in a large skillet, melt butter on medium heat. Season chicken with pepper and add to skillet. Cook for 4-5 minutes on each side, until chicken is cooked through. Place chicken in the prepared baking dish.
  • Using the same skillet, add the green beans  and cook, stirring for about 6 minutes, or until beans are crisp-tender. Sprinkle with flour and stir for an additional minute. Stir in broth and let simmer for 3 minutes, stirring frequently. Add cream cheese and stir until melted. Spoon the mixture over chicken and top with stuffing, spreading it as evenly as you can.  
  • Bake uncovered for 30 minutes or until heated through and bubbly. 

Notes

You can also prepare all the way up to the baking point, refrigerate overnight, and then bake the next day!
