As we head into the depths of winter, and the cold weather is digging it’s heels in, that means it’s time for all the cold weather comfort foods. And that doesn’t just mean soups and stews.
No, my friends. That means casseroles. Warm, comforting casserole recipes. Now, I know that some people have an aversion to casseroles in general, but that just means they haven’t had the right kind of casserole. The kind that has a texture other than mush, and is full of flavor.
I’m talking about baked chicken and green beans with a creamy sauce, topped with stuffing, that is baked until the stuffing has a nice crispness to it. A one-dish meal that covers all the food groups, and will not leave you wanting for anything.
And did I mention that it makes great leftovers? If there’s any left, of course. This is a chicken and green bean recipe the whole family will love, even the little ones! Nat usually gravitates to all things carbs, but this time she devoured all her green beans first and then asked for more – before she even touched the stuffing.
That, my friends, is something to celebrate. I should also mention that green beans are not her favorite vegetable. I usually hear, “I don’t want gween bean,” as she turns up her nose and holds it out for me to take away.
That means this is not just another casserole. It’s a casserole that could convert the naysayers. Get the kids to eat their veggies. Earn you a dinner super hero cape. It is that good.
Oh, and another bonus – you can prep the casserole the night before, refrigerate it overnight, and then just throw it in the oven when you get home from work, if you need to keep to the 30-minute meal schedule. Or you can make it on a weekend or a night when you have a little more time. Isn’t it nice to have options??
How to make Chicken and Green Bean Casserole:
1. Preheat oven to 400 degrees F. Spray a 9 x 13 casserole dish with cooking spray and set aside.
2. Prepare stuffing according to package directions (or use leftover holiday stuffing!)
3. Meanwhile, in a large skillet, melt butter on medium heat. Season chicken with pepper and add to skillet. Cook for 4-5 minutes on each side, until chicken is cooked through. Place chicken in the prepared baking dish.
4. Using the same skillet, add the green beans and cook, stirring for about 6 minutes, or until beans are crisp-tender. Sprinkle with flour and stir for an additional minute. Stir in broth and let simmer for 3 minutes, stirring frequently. Add cream cheese and stir until melted. Spoon the mixture over chicken and top with stuffing, spreading it as evenly as you can.
5. Bake uncovered for 30 minutes or until heated through and bubbly.
