Garlic Parmesan Orzo

Creamy, cheesy, garlicky orzo makes the perfect side dish for...pretty much anything!

Ingredients

  • 2 qts water (or chicken broth)
  • 1 cup orzo (I used whole wheat orzo)
  • 2 Tbsp butter
  • 2 cloves garlic, minced
  • 1/3 cup milk (or chicken broth if you prefer)
  • 1/4 cup shredded Parmesan
  • 1 tsp salt (or to taste)
  • 1/2 tsp pepper
  • 2 Tbsp chopped parsley

Instructions

  • Heat water or broth in a medium pot, to boiling.
  • Add orzo and cook, according to package instructions, for about 8 minutes - until al dente. Drain water from orzo and set aside (out of the pot.)
  • Return pot to burner, over medium heat, and add butter and garlic. Stir until butter is melted, then add the milk and Parmesan. Stir until cheese is melted, then season with salt and pepper. 
  • Add orzo back to pot and stir to combine. Taste and adjust seasonings, if needed. 
  • Remove from heat, stir in parsley, and serve!
