Ingredients

  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup milk
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 cup apple, peeled and finely chopped
  • 1 cup cinnamon chips

Instructions

  • Preheat oven to 375 degrees. Line cookie sheet(s) with foil or parchment paper.
  • In a medium bowl, mix flour, baking soda, nutmeg, and cinnamon and set aside.
  • In a mixing bowl, combine butter and sugars on medium speed until creamy.
  • Add egg, milk, and vanilla and mix until fully incorporated.
  • Add flour mixture in 2 batches, mixing until fully incorporated after each batch.
  • Add apples and cinnamon chips and blend in with a spoon.
  • Use a small or medium cookie scoop to drop dough onto cookie sheet (I press them down slightly because they don’t spread very much and you get a little flatter of a cookie this way, versus a cookie ball), and bake 10-12 minutes or until lightly browned. For best results, cook on the middle oven rack.
  • Allow to cool on the cookie sheet for a couple of minutes before moving to cooling rack to cool completely.
