- 1 Tbsp olive oil
- 1 lb boneless skinless chicken breasts
- 1 tsp salt
- 1/2 tsp pepper
- 1 cups mixed salad greens
- 1 avocado, peeled, and chopped
- 6 oz raspberries
- 6 oz blackberries
- 4 eggs, hardboiled and chopped
- 1/2 cup feta crumbles
- lime or raspberry vinaigrette
Heat olive oil in a medium skillet over medium-high heat.
Season chicken with salt and pepper and add to hot skillet. Cook for 3-4 minutes per side, or until cooked through (165 degrees F). Remove to a cutting board and allow to cool, then cut into bite size pieces.
To assemble, use a large salad bowl and place the salad greens in first. Then make rows with the hardboiled eggs, blackberries, chicken, avocado, raspberries, and feta. (Alternately you can assemble in individual bowls and divide the toppings accordingly.) Serve with a lime or raspberry vinaigrette!
