Ingredients

  • 4 cups butternut squash cubed in 3/4" pieces
  • 1 lg Granny Smith apple cut into 3/4" pieces
  • 1 Tbsp maple syrup
  • 2 Tbsp olive oil
  • 3 Tbsp brown sugar
  • 1/4 tsp salt
  • 1/2 cup chopped pecans

Instructions

  • Preheat oven to 375 degrees F.
  • Place butternut squash and apples in a bowl.
  • Whisk together olive oil and maple syrup. Drizzle over butternut squash and apple pieces and toss to coat. Spread on a baking sheet and sprinkle with brown sugar. Sprinkle with brown sugar.
  • Bake at 375 for 15-20 minutes or until squash is tender. Stirring every 5 minutes.
  • Sprinkle with salt and top with pecan pieces. Serve warm.
