Ingredients

  • ¼ cup minced shallots
  • ¼ cup minced fresh tarragon
  • ¼ cup champagne vinegar
  • 3 Tbsp warm water
  • 4 tsp olive oil
  • ¾ tsp kosher salt
  • ¼ tsp black pepper
  • 5 oz spring mixed greens
  • 2 cups cooked skinless boneless chicken breasts*, chopped or thinly sliced
  • 1 medium avocado, thinly sliced
  • 1 cup golden beets, shaved or thinly sliced
  • 1 cup fresh blackberries
  • 6 Tbsp crumbled feta cheese

Instructions

  • In a medium bowl, whisk together shallots, tarragon, vinegar, water, oil, salt, and pepper; set aside.
  • In a serving bowl, toss together greens, chicken, avocado, beets, berries, and dressing; sprinkle with cheese.

*I seasoned my chicken with salt and pepper and grilled on the stove for 4-5 minutes per side. Let rest for about 5 minutes before slicing.
