Ingredients

Strawberry Broccoli Salad

  • 5 cups chopped broccoli florets
  • 1 1/2 cups chopped strawberries (about 1 lb)
  • 1 sweet apple, (like Fuji), cored and chopped
  • 3/4 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1/3 cup crumbled feta
  • 1 large avocado, peel and pit removed, chopped

Creamy Poppy Seed Dressing

  • 1/2 cup vanilla Greek yogurt
  • 1/2 cup mayo or Miracle Whip
  • 1 Tbsp lemon juice
  • 1 Tbsp red wine vinegar
  • 1-2 Tbsp sugar
  • 1 Tbsp poppy seeds
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  • In a large bowl, combine all of the salad ingredients thru the feta.
  • In a separate bowl, whisk together the poppy seed dressing ingredients. Pour over salad and toss to combine. Gently stir in the avocados and refrigerate until ready to serve, at least 30 minutes, but overnight if possible. The longer you can let it sit, the better the flavors will set in.
