October 1st!! Hopefully that means that fall weather is near. Notice I said fall weather, not winter. Never winter. But I am waiting for the cooler weather, so that I can start putting the cooler weather foods on the menu. You know…soups and chili and such. Not that I can’t make those anytime, but…they just “go” better in non-100 degree weather.
For now, I’ve taken the Saturday grilling off the menu as my first attempt to move on from summer. Goodbye summer (hear that, Mother Nature?), and welcome, fall!
This week’s menu consists of a couple of new recipes, along with five (!) of my old ones that need some updating.
Sunday – Creamy Taco Spaghetti Casserole
Monday – Slow Cooker Basil Chicken in Coconut Curry Sauce, Brown Rice
Tuesday – Pulled Pork Tacos
Wednesday – Horseradish Crusted Salmon, sweet potato and bacon quinoa, roasted asparagus
Thursday – Chicken Croquettes, mashed potatoes, roasted broccoli
