Happy first week of July!! I’m a little late posting my menu plan this week, but the menu items were too good not to share, even if it’s late. There’s always planning for next week, right???
I’ve been trying to incorporate more grilling, more veggies, and more salads into our meals the past couple of months, and I am trying to continue that throughout the summer. Not only is it more healthy for us, but most of the time, it’s less work for me, too!
I definitely have some things on the menu this week that I’ll be repeating throughout the summer, because…YUM!! And also, I didn’t get pics the first time around (so far this week, anyway) and these are things I must share with you all!
Sunday – Venison Pot Pie
Monday – Flank Steak Citrus Salad
Tuesday – Venison Taco Burrito Bowl
Wednesday – Chicken Salad with Blackberries, Feta, Golden Beets and Avocado
Thursday (4th of July!!) – Grilled Steaks with Baked Beans and Pesto Veggie Kabobs
Friday – Muffin Tin Taco Cups
Saturday – Grilled Red Fish, Yellow Rice, and Grilled Asparagus
I’m not sure exactly what we’ll do on the 4th. We’ll grill, we’ll probably swim, but fireworks will be late, and this mama is taking Friday for herself to get some things done, which mean the little will go to daycare and needs to get in bed at normal time. Though lately, “normal” has been near 10 o’clock because she’s apparenlty on a sleep strike. That’s a post for another time, though. Just know that I’m tired. So, very tired. Send all the toddler sleep dust you may have to spare my way. Thanks!
