I’m not sure how we are almost at the end of March already, but here we are. It’s been a crazy month, to say the least, but I am so happy that spring is slowly showing itself. This is the time of year, however, where the changing weather makes dressing for the day (especially a toddler) more difficult. It’s in the 40s-50s in the morning, but high 70s in the afternoon.
Sure, there is layering, but…for a toddler who goes outside to play on the playground in the morning AND afternoon, she pretty much has to wear pants to school. So, pants, t-shirt, and a light jacket. And then by the time we get home and go to spend some time outside, watering the garden and such, it’s starting to cool off again. Come ON Texas weather, let’s just get on the same page. The same, consistently warm page. Thanks.
As I mentioned in previous weeks, the changing weather also means a change in the way I menu plan. No more soups, fewer oven recipes, and more grilling, salads, and slow cooker recipes. Not that my slow cooker really gets a break during winter. Because, busy.
This past couple of weeks I also changed up my normal menu planning by doing only 1 week at a time, where I usually do 2-2 1/2 weeks at a time. It was…weird. But, I was having a hard time nailing down two weeks, so I just said, eh…let’s just get one week done and I’ll worry about the next week…next week. Right?
It worked out this time, but I don’t see myself continuing that method going forward. I like getting menu planning and grocery shopping, other than weekly produce, twice a month instead of weekly.
So, now I share with you my menu plan for this last week of March. I hope you get some inspiration here!
Sunday – Chicken Fried Venison w/ Jalapeno Cream Gravy, Mashed Taters, Green Beans
Monday – Salmon with White Wine & Lemon Sauce, Roasted Brussels, Garlic Parm Orzo
Tuesday – Sweet Pork Tacos with Cilantro Ranch
Wednesday – Slow Cooker Chipotle BBQ Meatball Sandwiches, Sweet Tater Fries or Tots
Thursday – Venison Burrito Salad Bowls
Friday – Chicken Roll-ups, Broccoli Apple Salad
Saturday – Family function – Grilling Steaks, Assorted Side Dishes
