Friends. I just can’t with this insane weather. How are my northern and midwest peeps doing?? The polar vortex is no joke. Meanwhile we’re having a winter heat wave in Texas. I don’t get it. I’ve said it before, but the unpredictable weather makes weekly menu planning a bit…tricky.
How’s a girl supposed to plan ahead when the weather should be cold, but it’s actually going to be in the 70s this weekend?? Grilling weather instead of soup weather. Mind-boggling is what that is.
Fortunately I have the ability to be adaptable in my weekly menu planning, since my shopping usually gets done on Saturday or Sunday for the coming 2 weeks, at the beginning and middle of the month. I really, really feel for all of you who are in such horrifically cold weather that you bascially can’t leave the house. I can’t imagine how nerve-wracking that must be. Especially being home-bound with kids.
I imagine that cabin fever becomes very real, very quickly. Sending virtual hugs to you and wishing I could send some of this silly Texas warmth your way.
February, let’s be nicer to everyone than January was, eh? I’m talkin’ milder temps for my friends and some sort of consistency here in Texas. Pick a season and let’s go with it, ‘k?

Thursday – Venison Roll Ups, Roasted Rosemary Onion Potatoes, Roasted Broccoli
Friday – Breakfast for dinner! Pan-fried Venison Tenderloin and Eggs
Saturday – Slow Cooker Chicken Parmesan Sammiches with Sweet Tater Fries
