Hi, friends! This past week was insanely busy at work, as will be the upcoming week. It’s that time of year, meetings, legislative day at the Capitol – it’s all hands on deck and LOTS to be done in preparation. I am beyond exhausted, and I’ve been on my feet so much that I am so sore. It’s craziness!! But, I just remind myself that after this week, things will settle down for a couple of months and I can, you know – breathe a bit.
Several nights last week I sat in front of my computer after putting the kiddo to bed, in an attempt to edit photos and share some awesome recipes with you all. But…I just couldn’t do it. I didn’t have the energy to stay up and focus. So, but Thursday I just accepted that no posts were going to go up for the week. And, if I’m being honest, I don’t know if any will go up this coming week either. But by golly, I’m getting the menu plan posted! It’s the little things, right?
I promise I have some great things coming AND Spring Sweets Week will be here soon, and that will bring not only six great recipes from me, but recipes from thirty other amazing bloggers, too! I figure I’ll make up for this two week hiatus in the weeks to come.
So, to tide you over for the next week, here is my menu plan!
Sunday – Venison Enchiladas
Monday – Greek Turkey Meatballs with Spinach & Feta, Zoodles, & Tzatziki Sauce
Tuesday – Venison Chorizo Mac n Cheese
Wednesday – Salmon with Lemon Basil Cream Sauce, Asparagus, Couscous
Thursday – Venison Sausage Tortellini Skillet
Friday – Venison Black Pepper Stir Fry, Brown Rice
Saturday – Guinness Steak Skewers with Smoked Gouda Dipping Sauce
