Hello and welcome to 2015!! 2014 was an amazing year, but I am looking forward to all that 2015 has in store! I always have fun looking back on the previous year to see which recipe posts were the most popular among the readers.
#14 – Crispy Chipotle Shrimp Tacos with Chipotle Lime Sauce
Even with my failed attempt at making homemade tortillas, these were some super tasty tacos!
#13 – Sweet ‘n’ Spicy Omelet (SSO)
I posted these on a whim, after making them for J one morning, but you all seemed to love the idea of them as much as he loved eating them!
#12 – Brie & Blackberry Chicken Sammich
This was, by far, one of my very favorite weekend meals last year. Of course, it has blackberries. And brie. So….yeah.
#11 – Crustless Ham & Spinach Quiche
This, right here, is J’s favorite breakfast. It is the most repeated recipe in our house for sure. Very simple, but super delicious!
#10 – Crustless Smoked Venison & Gruyere Quiche with Spinach and Kale
This variation of the above quiche made good use of J’s first deer from the 2013 season. He still likes the original better, but this one is a close second.
#9 – Pork & Chorizo Meatballs
Chorizo. Need I say more? YUM.
#8 – Balsamic Pork Chops
Ah, pork chops covered in one of my most favorite things – balsamic vinegar. Yes. A million times yes.
#7 – Creamy Venison Sausage and Spinach Pasta
I had a lot of fun finding recipes to use our freezer full of venison in, in 2014. We had a LOT of smoked venison sausage, and not all that many recipes were to be found online for it, so I had to modify “regular” smoked sausage recipes by using venison sausage instead. Thankfully they turned out fabulously and we had some great meals!
#6 – Lemon Chicken Parmesan
This one, friends, is no surprise for me to see on this list. I was so in love with the lemony deliciousness that I knew my readers would love it too!!
#5 – Lemon Sugar Cookies with Lemon Cream Cheese Frosting
Even though J would say the pumpkin cookies with white chocolate chip or the oatmeal raisin cinnamon chip cookies were the best of 2014 (well, best of ever for him, really), the number of views these little babies got says otherwise. I was so obsessed with these, I had to get them out of the house right.away.
#4 – Garlic-Mustard Pork Tenderloin
We eat a good amount of pork tenderloin in our house and I think this was probably one of my (if not “the”) favorite. The sauce really makes it. But sauce usually does, amiright?
#3 – Cilantro-Lime Salmon
We also eat a lot of salmon, and I’m always looking for new recipes. This one was simple but packed full of flavor.
#2 – General Tso’s Beef Meatballs
I have long been a fan of General Tso’s chicken, and these meatballs were a great way to have that flavor at home. I chose to use ground sirloin instead of chicken or turkey and it worked out perfectly!
#1 – Hummus-Crusted Chicken
I love hummus. More specifically, supremely spicy hummus. The great thing about this chicken is that you can coat it in whatever your favorite flavor of hummus is. And it’s just too easy. Throw chicken on top of sqaush and zucchini, smother chicken in hummus, and bake. Done and done. And, as this #1 spot shows…it’s a hit!
I want to say a big THANK YOU to all those who continue to come to my little corner of the interwebs and read, even with my times of absence (uh…2+ weeks and no posts…??) You guys/gals rock!! I’m so excited about 2015 and sharing all things food and non-food that are upcoming!
