Today I am sharing a recipe with you, my friends, that will leave you wondering where it’s been all your life. Fresh strawberries, crispy bacon, creamy brie, and peppery arugula in a pressed panini sandwich, with a sweet and tangy balsamic honey dipping sauce. This, is what dreams are made of.
I’ve become increasingly fond of sandwiches that have fruit and cheese in them. Probably because they’re nothing short of amazing. And sandwiches, in general, are probably my favorite food. So, there’s that.
The layers in this panini are not only perfectly balanced in flavors and texture, but also in the thickness. No one layer overpowers the other, and the bread is pressed thin so you aren’t getting all bread and just a little filling. But let me tell you…the panini is filling. I had a hard time finishing mine all in one sitting. It was too good not to, though.
What do you need to make Strawberry Bacon Brie Panini with Balsamic Honey Sauce?
Balsamic vinegar – good quality, aged balsamic gives the best flavor
Honey – a local, pure honey if possible
Thick bread – like a brioche works best since it is pressed thin in the panini press
Bacon – I used maple bacon, but use your favorite kind!
Strawberries – you want them ripe, but not so ripe that they are mushy
Arugula – the peppery component adds great flavor to the panini!
How do you make Strawberry Bacon Brie Panini with Balsamic Honey Sauce?

1.) To make the balsamic honey sauce, combine the balsamic vinegar and honey in a small saucepan over medium-low heat. Simmer, stirring constantly, until the liquid is reduced by about half (15 minutes or more). Pour the liquid into a small bowl to cool while you make the panini.
2.) On two slices of bread, place 3-4 slices of brie (depending on the size of your bread.) Top each with half of the sliced strawberries, half of the bacon, and half of the arugula, more brie, and then the other two slices of bread.
3.) Heat panini press and place both sandwiches inside, close to press. Cook until nicely browned and brie is nice and melty.
4.) Slice each sandwich in half and serve warm with the balsamic honey sauce.
