Slow Cooker Buffalo Chicken Chili

Slow Cooker Buffalo Chicken Chili is the perfect cold-weather meal that is a creamy and hearty with a little bit of kick.

If you’ve been around here for long, you know that I pretty much love all things buffalo. And if you’re new ’round these parts – know that I pretty much love all things buffalo. And lemon. And balsamic. But I digress. Since having my kiddo 5 years ago (WHAT?!?), or really once she started eating real food, I’ve had to cut back majorly on the spicy-factor in the meals I cook at home. That means, sadly, that I haven’t made anything buffalo-y in quite some time. I

I decided though, that mama and daddy need to have things they like sometimes (and since we don’t eat out all that often, that means it has to be at home!), and little miss can have something else that night. We keep holding on to hope that she will love spicy food as much as we do, some day. And, the great thing about this chili – besides the obvious – is that you can adjust the heat-level to suit your preferences. I actually didn’t make this fire-breathing hot, in case she did want to try it. And hubby and I enjoyed it very much. And you will, too!

What it takes to make Buffalo Chicken Chili

Ground chicken
Great Northern beans
Chicken broth
Buffalo wing sauce
Ranch dressing mix
Onion powder
Garlic powder
Cilantro
Salt
Cream cheese
Blue cheese crumbles, optional

How to make Slow Cooker Buffalo Chicken Chili

  1. Cook chicken in a medium skillet over medium heat until browned and cooked through. Transfer to slow cooker.
  2. Add beans through salt and stir to combine.
  3. Place cream cheese on the top and cover.
  4. Cook on high for 4 hours, or low for 8.
  5. Once done, stir in cream cheese until well-combined. Taste and add additional buffalo sauce, if desired.
  6. Ladle into individual bowls and top with additional cilantro and/or blue cheese crumbles, if desired.

Ingredients

  • 1 lb ground chicken
  • 15 oz can Great Northern beans, drained and rinsed
  • 2 cups chicken broth
  • ¼ – ½ cup buffalo wing sauce
  • 1 package ranch dressing mix
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 Tbsp cilantro, chopped (plus extra for garnish, if desired)
  • ¼ tsp salt
  • 8 oz cream cheese
  • Blue cheese crumbles, optional
