Baked Parmesan Tomatoes

Happy Monday folks! It’s time again for the Secret Recipe Club reveal! This month I was assigned the blog Mrs. Happy Homemaker, and let me just tell you that Crystal is one busy mama!! Between her three children and many animals, I’m not sure how she has time to get dinner on the table! But, somehow she does it all (homeschooling and editing for a magazine included) and still shares her delicious recipes with her readers.

 

I decided to look for a good side dish, and it didn’t take me long to find these delicious baked Parmesan tomatoes. The picture doesn’t do them justice, they were some tasty little buggers. The Parmesan gets a little crispy and pairs nicely with the soft baked tomatoes. They made the perfect veggie side dish and they were so simple to make. I guess that’s part of Crystal’s magic formula to being a busy mama and still getting dinner on the table…quick and easy!

Baked Parmesan Tomatoes
Source: Mrs. Happy Homemaker
Ingredients
  • 2 large tomatoes
  • 1/2 cup shredded parmesan cheese
  • 2 Tbsp Italian seasoning (or herbs de provence)
  • Salt and pepper, to taste
  • Olive oil for drizzling
Preparation
  1. Preheat your oven to 450 degrees and line a baking sheet with foil. Spray with cooking spray.
  2. Slice the tomatoes into 1/4 inch slices and sprinkle with shredded Parmesan cheese, enough to cover the surface. Top with a little Italian seasoning, salt and pepper, and then drizzle olive oil over the top.
  3. Bake for 15 minutes, or until the cheese is melted. Keep an eye on it, your oven may cook them a little faster. Remove from the oven and remove with a spatula to plates, and enjoy!
