Pumpkin Mint Patties

Pumpkin Mint Patties are an adorable and delicious treat made with a silicone pumpkin mold, with an orange white chocolate coating, and filled with a minty sugar confection.

This post and recipe was created for #HalloweenTreatsWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% my own.

One of my favorite flavors is mint, and I just couldn’t resist making some adorable Halloween-themed mint candies, reminiscent of York peppermint patties. No, they aren’t chocolate, but they are minty deliciousness all the same. And who can resist a cute little pumpkin shaped treat for Halloween??

What you need to make Pumpkin Mint Patties

This is an overview – full list with measurements can be found below in the printable recipe card!

  • Unsalted butter
  • Light corn syrup
  • Powdered sugar
  • Mint extract
  • White chocolate chips or bark
  • Orange gel food coloring
  • Silicone Pumpkin mold (or any other shape, if you don’t have pumpkin!)

How to make Pumpkin Mint Patties

  1. Combine butter and corn syrup in the bowl of a stand mixer, or medium bowl if using a hand mixer.
  2. Add 2 cups powdered sugar and mint extract and mix on low until well combined.
  3. Stir in another cup of powdered sugar.
  4. Turn bowl onto a cutting board sprinkled with last cup of powdered sugar.
  5. Knead the mixture until sugar is absorbed and is completely smooth.
  6. Use a small cookie scoop or tablespoon to form uniform balls, and lay out on wax paper.
  7. Heat the white chocolate in a microwave safe bowl or measuring cup, for 1 minute on 50% power, and stir. Continue heating in 15 second increments until chocolate is melted. Don’t overheat or the chocolate will burn!
  8. Using your pumpkin mold, pour just enough of the melted chocolate into the bottom of each mold to cover the bottom and come up no more than a ¼-inch, but 1/8-inch would work perfectly. Stick your mold in the fridge for a few minutes to speed up the hardening process.
  9. Once hardened, remove from fridge and place one mint ball in the center of each and press down to flatten out. Leave room around the edge for the top layer of chocolate to go down to “seal” the patty.
  10. Pour another layer of chocolate over the top of each mold, then gently tap the mold on the counter to smooth out the top. Return to fridge to harden, then gently turn each patty out onto wax paper.
  11. Repeat the process until all of the mint balls are used!

Notes

*If you are using a different mold for your patties, you may need to adjust the size of your mint balls. If the mold is smaller, you want the balls to be proportionally smaller as well.
**If chocolate needs to be warmed during the process, only warm for 10 seconds at a time.
***If you don’t want to make as many patties and you have mint balls for, you can freeze them in a resealable plastic bag, then bring to room temp on the counter when ready to use!
