Pear Blueberry Crisp is a refreshing dessert, full of fresh fruit and topped with a cinnamon-sugar oat crumble – perfect for spring and summer gatherings.

I’m a big fan of the crisp, it’s no secret. I mentioned yesterday that I’m not typically a big pie fan, because I don’t particularly love crust, and I feel like with a crisp, you get the delicious filling, with a crunchy topping, but no actual crust surrounding it. It’s the best of both worlds, for me. And that filling, y’all…so, so good. The pears and blueberries are so soft and warm, which pairs perfectly with the crunch bite of the topping. And if you add vanilla ice cream to the warm mixture…pure heaven.

I’ve taken to making a new flavor of crisp each year, this being my third, and I’ve gotta say, it’s one of my favorite non-cakey desserts to make now!

For the Filling:
Butterscotch pears – you can also use Bartlett, Bosc, or Anjou pears, if those are easier to find in your area
Blueberries – fresh or frozen
Granulated sugar
Lemon juice
Ground cinnamon
Salt
Vanilla extract paste

For the Topping:
All-purpose flour
Oats
Brown sugar
Ground cinnamon
Salt
Unsalted butter

  1. Preheat oven to 375 degrees F and place oven rack in middle. Spray an 9×9 baking dish with cooking spray and set aside.
  2. In a large bowl, combine the pears, blueberries, sugar, lemon juice, cinnamon, salt, and vanilla. Mix well, then transfer to the prepared baking dish, spreading into an even layer.
  3. In another bowl, mix the oats, flour, brown sugar, cinnamon and salt. Add in the melted butter and stir until mixed well and crumbly clumps have formed.
  4. Sprinkle the topping over the pear-blueberry mixture evenly, then bake 40-45 minutes, until topping is lightly browned and fruit mixture is bubbling.
  5. Remove from oven and allow to cool for at least 15 minutes. Serve topped with a scoop of vanilla ice cream, if desired.
  6. Store in an airtight container in the fridge for 3-5 days. Leftovers can be eaten cold or warmed in the microwave or oven.

Ingredients

For the Filling

  • 1 tsp lemon juice
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 tsp vanilla extract paste
  • Vanilla ice cream for topping, optional

For the Topping

  • ½ cup all-purpose flour
  • 1 cup oats
  • ½ cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/4 teaspoon salt
  • 5 Tbsp unsalted butter, melted

Instructions
