Orange Creamsicle Coffee Caramels have a hint of orange and coffee, topped off with fleur de sel that compliment the creamy, buttery caramel perfectly!

Orange Creamsicle is one of those flavors that we all associate with spring and summer. Light and refreshing, perfect for the warm weather. I came across some Orange Creme coffee awhile back and had been trying to think of a recipe to use it in. That, my friends, is how these Orange Creamsicle Coffee Caramels came to be. And oh, are they ever good!

The caramel is so creamy and smooth, with the perfect amount of orange and coffee flavor. And the fleur de sel on top really sets it off. Salty, creamy, deliciousness.

Heavy cream
Granualated sugar
Brown sugar
Orange Creme ground coffee
Light corn syrup
Salt
Vanilla extract paste
Unsalted butter
Fleur de Sel (coard seas salt)

how to make orange creamsicle coffee caramels

  1. Line a 9-inch square baking pan with aluminum foil or parchment paper, leaving enough overhang on the sides to easily remove the caramel once it has set. Lightly grease the foil or parchment with butter.
  2. Combine the cream, sugars, coffee grounds, and corn syrup in a 3-quart heavy duty saucepan over medium heat. Using a wooden spoon, stir constantly as the sugars dissolve. The mixture will be thick and cloudy looking. Continue cooking until the mixture comes to a boil.
  3. Once boiling, brush down the sides of the pan with a water-moistened pastry brush. Attach a candy thermometer to the pan, making sure not to let it touch the bottom.
  4. Without stirring, cook until the temperature reaches 245°F (118°C). Immediately remove from heat and stir in 1 teaspoon of salt, the vanilla extract, and butter. The mixture may burst and bubble, so be careful stirring.
  5. Pour the hot caramel into the prepared baking pan and top with coarse sea salt, if desired. Allow to cool at room temperature, uncovered, for 4 hours or overnight (no need to cover).
  6. Once set, remove the caramel from the pan by lifting out the aluminum foil. Peel the foil off and, using a very sharp knife, cut into rectangles or squares. Wrap with candy wrappers, if desired.

Ingredients

  • 1 1/4 cup heavy cream

  • 1 Tbsp Orange Crème ground coffee*
  • 1/3 cup light corn syrup
  • 1 tsp salt
  • 1/2 tsp vanilla extract paste
  • 2 Tbsp unsalted butter plus more for lightly buttering the pan
  • Coarse sea salt (fleur de sel), for topping
  • Twisting wax paper (for wrapping), optional

Notes

Notes: If you don’t have an Orange Crème coffee, you can use 1 tablespoon of espresso powder and 1 teaspoon of orange zest, instead.
Also, if you don’t want the coffee grounds in the caramels (texture preference), you can brew the coffee and add a couple of tablespoons of that in place of the grounds.
