Minty Watermelon Agua Fresca

If you’re looking for a refreshing summer beverage that the whole family can enjoy, then this Minty Watermelon Agua Fresca is exactly what you need!

Watermelon just screams summer, doesn’t it? Whether it’s fresh watermelon, sliced and enjoyed outside on a hot day, or a delicious beverage enjoyed on the back porch, it’s a refreshing way to beat the heat.

About a month ago, I shared my Spicy Watermelon Margarita, which is a great way to use watermelon in an adult beverage. But, what about the kiddies, or the non-drinkers? They should get to enjoy a great watermelon drink this summer, too! And my little one was none to happy that she couldn’t share mama’s watermelon drink, so I decided to make her one all her own.

We talked about making it for a few days, and when it was finally time she was so excited to help. And eat some watermelon slices along the way. Obviously I didn’t let my not-yet-four-year-old run the blender, but she sat on the counter and “helped” me put the ingredients in, and then squealed with delight when I turned it on.

It took all of five minutes to create, and the part that took the longest was pressing the mixture through a mesh strainer to get most of the pulp out. Because Little Miss does not do pulp. And to be honest, neither does mama. Yuck.

It was easy to make and gone before we knew it. The little was happy to have a drink “like mama’s” and I enjoyed a few glasses myself. This is a perfect summer drink that can be enjoyed by all!

How do you make Minty Watermelon Agua Fresca?

1.) Place watermelon cubes, lime juice, mint leaves, cucumber and honey in a blender and mix until smooth.
2.) Using a fine mesh strainer and a spatula, pour the watermelon puree through (into a bowl) and press down with the spatula to strain out any pulp. Discard pulp.
3.) Pour watermelon puree into a pitcher. Stir in seltzer water when ready to serve. Stir or blend to mix. Alternately, you can pour into glasses, over ice, about half full and add seltzer water to each glass.
4.) Serve over ice, garnished with watermelon cubes or slices and mint leaves, if desired.

What is Agua Fresca?

Agua fresca is a light non-alcoholic beverage made from one or more fruits, and blended with a sweetener and water. I used honey as the sweetener and sparkling water (seltzer) for a little fizz. The flavor possibilites are almost endless, and I can’t wait to try more this summer!

Ingredients

  • 5 cups cubed watermelon
  • 1/4 cup fresh lime juice

  • 1 Tbsp honey
  • 1 liter seltzer water
