June proved to be a more successful month for re’makes, with a total of 9! As I copied the photos over, some from when the blog was just beginning, I realized that I missed some opportunities to get better photos. ::shrug:: Next time!
Baked Ziti – J is a big fan of pretty much anything involving marinara sauce. I’m not so much, but I knew I had at least a couple of recipes with a tomato-y sauce that I could fix for him. I like that this baked ziti has zucchini in it. I’m not sure if that’s the norm for other ziti recipes, but it sure adds a little something to this one!
Ham & Swiss Sliders – There isn’t much to say about these that I didn’t gush in the original post. They are freaking delicious and I had to share them with J!! Although, after eating (a lot) of them, I’m sure he’d rather I didn’t make them too often and cause him to pack on the pounds (rolling eyes)!
Pizza on the Grill – Ok, so back when I first experienced making pizza on the grill, and got past the trial and error phase of the first attempt, I was hooked. It’s something different, it’s fun, and I got to make the dough and sauce from scratch. J loves to grill so I thought it would be a fun weekend meal for us. He looked at me like I was crazy when I first mentioned it to him, but he was on board to try. I have to admit that it’s been a couple of years since I last did this, and it felt a lot like the first time…difficulty rotating the dough, taking forever to cook, etc. I also made whole wheat dough this round, which I hadn’t done before, and that may have contributed to the difficulties. But all-in-all it was a success. J loved the pizza and I got to make the dough and sauce again!!
Korean Beef Tacos with Cucumber-Radish Slaw – I don’t normally re-make things quite this quickly, but J requested it at the beginning of the month when I was working on my menu plan, so of course I had to add it. Seems like I just posted this one a few days ago!! Just as good as the first time, they were gobbled up for dinner, and packed up for lunch the next day.
Chicken Diablo – The sauce on this chicken is freaking amazing y’all. I hadn’t made it in quite awhile, but since J loves spicy food like I do, I thought I’d make it for him. Granted, it’s not super spicy, but the hot sauce gives it a nice kick. Next time I will use fat free Greek yogurt in place of the sour cream, to save a few calories.
Caramelized Chicken with Jalapeno Cream – this is another one of those “I love the sauce so much I can’t stand it” recipes. I feel like a broken record, always saying how much I love sauces – but it’s true! Creamy, a little spicy, and great for the whole plate!!
Garlic, Ginger, and Scallion Shrimp – I feel like it’s been too long since I’ve made this dish. The first time I made it, I fell in love and repeated it a few times within a few months. And then I realized that more than a year (maybe 2?!?!) had passed since I made it. Such a shame!! But, it graced the kitchen once again, and reminded me why I love it so much…deeeelicious!
Grilled Asian Pork Tenderloin Salad – I am so thankful that I had J to share this salad with this time around. You may remember that last time, I wound up eating the entire thing within one day. It may be a salad, but without portion control, the healthiness of it goes right out the window!! But it was too good for me to walk away from. Sharing is good, I tell ya! 😉
Thai Coconut Curry Shrimp – And finally, more Thai flavors!! These little shrimp are so, so good and so, so easy to make!! It’s a quick and easy meal to throw on top of some rice and go! Great Thai flavors (did I say that already?!?!) that you don’t want to miss out on!
