Grilled Citrus-Marinated Pork Chops

Grilled Citrus-Marinated Pork Chops are thick, bone-in pork chops marinated in citrus and spices, grilled to perfection and then topped with a thick, reduced sauce made from the marinade. These chops are what grilling dreams are made of.

We do a lot of grilling in the spring, summer and fall and most of the time we rotate sausages, different kinds of burgers, and fajitas. But now and then we like to switch it up with some good, thick pork chops. And these aren’t just any pork chops. They are citrus-marinated pork chops. And they are fan-freaking-tastic.

The chops are marinated in citrus juices, spices, soy sauce and cilantro for about an hour, then grilled to juicy perfection. And while they’re grilling, you take that marinade and pour it into a saucepan and simmer it to thickened sauce bliss, which you then spoon over or dip those tasty chops in. I’m telling you, once you’ve made these, it’ll ruin other pork chops for you. These are all you’ll want.

  • Bone-in pork chops (1-inch thick)
  • Orange juice and zest
  • Lime juice
  • Soy sauce
  • Olive oil
  • Sugar
  • Cumin
  • Chili powder
  • Garlic
  • Cilantro

How to make Grilled Citrus-Marinated Pork Chops

  1. In a medium bowl, combine the orange juice and zest, lime juice, soy sauce, olive oil, sugar, cumin, chili powder, garlic and cilantro for the marinade. Whisk together until well-combined.
  2. Place the chops in a large resealable plastic bag and pour the marinade in on top. Seal the bag and turn to coat well. Allow to sit at room temperature for 30 minutes to an hour. If you would like to marinate longer, refrigerate for up to 3 hours, but bring it back to room temp before grilling.
  3. Preheat your grill or grill pan over medium-high heat, remove the pork chops from the marinade – reserving the marinade – and cook for 3-5 minutes per side, or until internal temperature reaches 165 degrees F.
  4. Meanwhile, place the reserved marinade in a small saucepan over medium-high heat. Bring to a boil and then reduce to a simmer for about 5 minutes (or more if necessary) until reduced and slightly thickened.
  5. Serve chops with a spoonful of sauce (or in a bowl for dipping.)
