Grapefruit Yogurt Loaf Cake is a citrusy cake that is moist, delicious and good for breakfast, dessert, or any time you can get your hands on a slice!

I love a good sweet bread loaf cake, don’t you?? They are so customizable that you can make them for any time of year or occasion, and when done right, they are so light and moist and you can eat a slice any time of day! Citrus is always a good flavor choice for a loaf cake, and this Grapefruit Yogurt Loaf Cake is no exception. It is light and refreshing with just the perfect touch of sweetness from the grapefruit icing.
I used Dixie Crystals sugar in this recipe (as I do in most of my recipes), but I wanted to point out to my friends in the southern US, that Dixie Crystals’ sister company, Imperial Sugar, is what we are able to buy down here. Same great product, just a different name on the label. The quality of ingredients used definitely makes a difference in the finished product, so whether you are able to find Dixie Crystals or Imperial Sugar in your area, that’s what I prefer to use for baking.
What you need to make Grapefruit Yogurt Loaf Cake

For the loaf cake
- All-purpose flour
- Baking powder
- Salt
- Honey vanilla Greek yogurt (or you can use plain!)
- Brown sugar
- Eggs
- Grapefruit (zest and juice)
- Almond extract paste
- Coconut oil
For the grapefruit icing
- Grapefruit (zest and juice)
- Powdered sugar
- Vanilla extract

How to make Grapefruit Yogurt Loaf Cake

- Preheat the oven to 350 degrees F. Grease a 9×5 inch loaf pan with butter and flour or a cooking spray with flour in it.
- In a small bowl, whisk together the flour, baking powder and salt. In a medium bowl, whisk the eggs. Add the yogurt, brown sugar, oil, grapefruit juice and zest, and almond extract and whisk until combined.
- Stir the dry ingredients into the wet, mixing until full combined. Pour the batter into the greased loaf pan and bake for 50 minutes, or until the center is set and a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove it gently and set it on a cooling rack to cool completely. Once cool, pour the icing over top. Let the icing set, then slice and serve!
For the grapefruit icing
Whisk the zest, powdered sugar grapefruit juice, and vanilla extract together in a large bowl until smooth. Pour it over the cake once cooled.

- 1 9×5 Loaf Pan
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 3/4 cup honey vanilla Greek yogurt (you can use plain if you prefer)
- 1 cup packed brown sugar
- 2 Tbsp grapefruit zest
- 1/4 cup freshly squeezed grapefruit juice
- 1 tsp almond extract paste
- 1/2 cup coconut oil, melted
For the Grapefruit Icing
- 1 Tbsp grapefruit zest
- 1 1/2 cups powdered sugar
- 2 Tbsp freshly squeezed grapefruit juice
- 1/2 tsp vanilla extract
