If you love chocolate and raspberry, then these Chocolate Raspberry Crumb Bars are the perfect treat for you! Creamy chocolate, raspberry preserves and a perfect crust and crumb topping make this a dessert bar you won’t be able to resist.
Chocolate and raspberry is one of my favorite flavor combos. If there is a dessert with that combo, you can bet I am going for it. Raspberry-filled chocolates are a particular favorite. And these bars…these bars have been on my list to make for a LONG time. Pretty sure I’ve put them on my baking list and bought the ingredients more than once, but for one reason or another, they didn’t get made. Such a shame really.
Because, they are actually really easy to make and they taste so decadent! Definitely a dessert worthy of being on a brunch table.
I made these one day while I was home alone, but then I had to hide them so my little one wouldn’t see (and want) them before I could take pictures. I’m not sure how she didn’t sniff them out with that little chocolate-loving nose, but they made it to the next day for their photo shoot.
What do you need to make Chocolate Raspberry Crumb Bars?
Unsalted butter
Brown sugar
Flour
Salt
Bittersweet chocolate chips
Semi-sweet chocolate chips
Sweetened condensed milk
Raspberry preserves
How to make Chocolate Raspberry Crumb Bars:

1.) Preheat oven to 350 degrees. Line a 9×13 baking dish with parchment paper, or spray with cooking spray (I like the one with flour in it.)
2.) In the bowl of a stand mixer (or large bowl if using a hand mixer), cream together the butter and sugar until smooth.
3.) Add flour and salt and mix until crumbly.
4.) Press 1 3/4 cups crumb mixture into the bottom of the prepared baking dish.
5.) Bake for 10-12 minutes or until golden brown. Remove, but leave oven on.
6.) In a medium, microwave-safe bowl, combine the sweetened condensed milk and bittersweet chips and heat on medium heat, in 30 second intervals in microwave until chips are melted. Stir until smooth.
7.) Pour over hot crust and spread until even.
8.) Sprinkle reserved crumb mixture over chocolate mixture and then drop small teaspoonfuls of the raspberry preserves all over the top.
9.) Sprinkle with the semi-sweet chocolate chips and return to oven and bake for 25-30 minutes, or until set.
10.) Allow to cool, and then cut into bars.
Waiting for these to cool so you can eat them will be the hardest part. Thankfully they cool pretty quickly, and really…you could always take a fork or spoon and dig in before they’re cut. You know, if you just can’t handle the wait!
