Balsamic Lemon Poppyseed Vinaigrette

This Balsamic Lemon Poppyseed Vinaigrette is the perfect summer salad dressing. A little tangy, a little tart, and perfect with so many salad variations!

You may have seen my Summer Berry Spinach Pasta Salad the other day, where I introduced this amazing Balsamic Lemon Poppyseed Vinaigrette. It combines two of my very favorite flavors – lemon and balsamic vinegar – in one amazing vinaigrette that is perfect for any of your favorite salads.

Lemon Poppyseed dressing is fantastic in its own right, but adding balsamic vinegar elevates it to another level of yum. It has the perfect balance of sweet, tart, tangy, and creamy that goes amazingly well with any type of salad, but I especially love it on salads that have fruit in them. They’re a match made in heaven.

What do you need to make Balsamic Lemon Poppyseed Vinaigrette?

Balsamic vinegar
Olive oil
Honey
Shallots
Lemon juice
Brown mustard
Poppyseeds

A few simple ingredients, blend them all up, and pour it on all the things. Seriously. All. The. Things. I would start with the Summer Berry Spinach Pasta Salad!

Whatever salad you decide to try this on first, you won’t be disappointed! A little bit goes a long way, so you can try it on several salads! Keep stored in the fridge in an airtight container and shake or mix well before each use as it will separate a bit after sitting.

Ingredients

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 cup lemon juice
  • 1/4 cup honey
  • 2 tsp brown mustard
  • 1/4 cup diced shallot
  • 1 Tbsp poppyseeds

Instructions

  • Combine all ingredients, besides poppyseeds, in a blender and mix until well-combined. Stir in poppyseeds and pour into a dressing bottle or other container for serving. Drizzle over salad, toss to combine and serve!
