It’s a good thing that K & I really like fish, because we’re eating a lot of it these next couple of weeks. This recipe from Men’s Health Magazine for Baked Cod is simple and delicious. Not much fuss or preparation needed – just season & bake! Paired with brown rice & asparagus, it was a great lunch meal!
Lemon & Olive Oil Baked Cod

Ingredients

2-4 cod fillets, 1″ thick

1 1/2 Tbsp lemon juice

1 Tbsp olive oil

2 garlic cloves, minced

1/2 tsp dried thyme

1/8 tsp pepper

1/4 tsp paprika
Preparation
- Heat oven to 400 degrees.
- Place the fish in a baking dish and drizzle lemon juice & olive oil over the top, then sprinkle with remaining ingredients and bake 15-20 minutes, until opaque.
