Crisp-tender asparagus, crispy bacon, and creamy brie make this crustless Bacon, Brie and Asparagus Quiche the breakfast (or brunch) of champions!
I love quiche. More specifically crustless quiche. It’s perfect for a weekend breakfast, a brunch get together, or even dinner! And it is so customizable that you can change it up as often as you like. We definitely have our old favorites, but I love trying new combinations of meats, veggies, and cheese.
Like this Bacon, Brie and Asparagus Quiche. It has everything you need for a filling meal, and you can indulge without worrying about extra carbs from the crust. I don’t know about you, but I’d rather get my calories and such from the cheese. Because, cheese.
My quiche takes time, no denying that. But it is well worth it, I assure you. And it is important that you give it time to set after taking it out of the oven. Quiche soup is not what you want. Trust me. Patience is required, as hard as that can be.
J thought this particular quiche sounded a bit…fancy…but both he and the toddler both gobbled it up. And that little girl of mine, is a finicky breakfast eater on the weekends. Tacos? Eh. Bacon and eggs? Maybe. Pancakes? Probably. Quiche? Definitely. And the hubby is always down for quiche, even if he thinks my latest concoction sounds weird or “fancy”.
What ingredients do you need to make Bacon, Brie & Asparagus Quiche?
Bacon – whatever your favorite is – peppered, applewood smoked, and maple bacon are all good choices!
Asparagus – hardy ends trimmed and cut into bite-sized pieces (I also kept a few long pieces to place on top for the pretty factor – totally optional)
Brie – glorious, creamy brie. Need I say more? I used half a 7 oz wheel.
Flour – this helps the filling to set
Eggs – What this dish is all about! Can’t have quiche without the eggs!
Heavy Cream – You can use all milk if you don’t have heavy cream, but I highly recommend using it if at all possible.
Milk – Whole or 2% both work well. I wouldn’t use skim or 1%, for best results.
Salt and Pepper
How to make Bacon, Brie & Asparagus Quiche:

1.) Preheat oven to 350 degrees F. Spray a 9″ round baking dish or pie plate with cooking spray, set on a baking sheet for easy handling, and set aside.
2.) Heat a medium skillet over medium heat and cook bacon, until browned and crisp. Remove to a paper towel lined plate to drain off any excess grease and allow to cool slightly before crumbling.
3.) In a medium bowl, add the cooled bacon and asparagus pieces. Sprinkle with the tablespoon of flour and toss to coat and mix. Dump the contents into the prepared baking dish and spread out as evenly as possible. Top with slices of brie, spread out evenly. (I reserved a few longer pieces of asparagus to place on top, but that is definitely optional!)
4.) Using the same bowl, add the eggs and beat. Pour in the cream and milk and stir to combine. Season with salt and pepper, stir once more, then pour over the filling ingredients in the pie plate. Use a fork to help evenly distribute the egg mixture, if necessary.
5.) Place in the oven and cook for 45 minutes. Top will be a bit jiggly still and edges slightly browned. Allow to cool and set for 30 minutes prior to cutting. Once set, cut, serve, and enjoy!!
