So, in the past couple of months I have been making a concentrated effort to remake recipes that I love, rather than making something new every night. And, I’ve noticed that several of my blogger friends who do the same, do a recap of what they’ve remade each month. I thought that was a great idea, so I’m jumping on board!! Below are the recipes that I’ve remade in April – still as good as I remember, some even better!!
Enchilada Lasagna – this is one of those recipes that I have actually remade many times over the last couple of years. It’s easy, it’s healthy (yes!) and it’s freaking delicious. For serious, yo.
Maple Balsamic Glazed Pork Tenderloin – you all know how obsessed I am with the Balsamic…so of course I look for any excuse to use it!! And being able to introduce J to it? Just a perk! And he likes it too – but what sane person wouldn’t??
Beer-Battered Tilapia with Chile Garlic Mandarin Orange Sauce – I still remember when I made this for the first time, and how in love with it I was. I can’t believe that was a year ago!! And while the sauce didn’t seem to be as spicy as I remembered it to be, it was still insanely delicious!
Sriracha Turkey Meatballs – Another recipe from last April…that I posted on my 1 year blogiversary!! I love ground turkey and I love, love, love Sriracha, so these little “turkey balls”, as J calls them, are one of my favorite meals to make!!
Pan-Seared Salmon with Ginger-Lime Sauce – After we got back from Colorado, I realized that I hadn’t planned anything for dinner the night we got home. No biggie, I just pulled something forward that was planned for later in the week. But then I had an empty Monday and panicked trying to plan something that day. We’d had chicken the night before and I don’t like to do the same protein back-to-back nights, so J helped me decided on fish, and then this recipe. I LOVED the sauce with this dish so, so much! And thankfully, so did J. Crisis averted!!
Athenian Orzo – I loved it then, and I still love it now. Such a great all-in-one meal. No need for sides – this dish has it all!!!
Grilled Chicken with Roasted Garlic-Oregano Vinaigrette and Fingerling Potatoes – This was one of the very early posts on my blog, and looking back, I barely wrote anything at all about it!! It really is an amazing dish. Roasting the garlic takes a little time, but once that is done (and you can make the vinaigrette ahead of time if you want), it’s a pretty quick meal. And the flavor is out of this world amazing!! I didn’t use a gril this time, either, just my handing kitchen skillet. And I cooked the potatoes in the oven this time. Whatevs. It’s all about the vinaigrette anyway!
Buffalo Chicken Taquitos – Oh taquitos, how I adore you. Oh, and buffalo sauce?? I know we took a little break after I bombarded you all with post after post after post of buffalo chicken this or that…but these babies had to have a comeback…just look at them! I used whole wheat tortillas this round. Yum-o!
May has some delicious remakes in store, so watch for that June 1st!!
