Hello friends! It’s that time of the week again – menu time! I’ve been struggling lately with menu planning, but I *think* I may be getting a better handle on it. I have set “theme” days for the planning, which of course will change some as fall and winter approach. Currently I do casseroles on Sunday, slow cooker meals on Monday, tacos on Tuesday (duh!), Wednesday and Thursday are for whatever, finger food on Friday, and grilling on Saturday (Sammich Saturday will return soon, I promise!) This makes it a little easier for me to search for things I want to make – at least I have some guidelines, most days! Also, trying to plan for two adults and a toddler is…harder than one might think. Even though she eats what we eat, mostly, there are still things she can’t (or won’t) eat, so I have to take that into consideration, as well as making sure she is getting the proper nutrients. Iron is an issue for us currently. And, if you’ve ever had to take or give your kid an iron supplement, let me just say – YUCK. The smell alone is enough to make me want to give her only foods chock full of iron.
