You guys. It’s been 3 months since I wrote a food post, 2 months since I even posted a menu plan. I wish I could say I had some super exciting reason for going MIA, but really it’s just been life. The new job and such leaves me little-to-no time to work on the blog.
However, I have recently worked up a little schedule for myself that I’m hoping I can implement in the next week or so that will allow me time to work on the blog a few times a week. Now, figuring out time to take pictures of dinner – that’s a challenge in itself. But when I get that kink worked out, we should be back up and running in no time!! l
So, a few weeks late but – HAPPY NEW YEAR! I hope 2018 has been going well for you all thus far. It has been good to us, but chaotic and busy doesn’t even begin to describe how I feel most days. And blessed, of course. Blessed to have all the responsibilities that make life so busy.
Natalie is growing and talking so much. She’ll be 17 months old in just a few days, but you’d think she’s going to be 4 or 5. That sass, I’m tellin’ ya. My mama always told me having a little girl would mean I’d get to raise a little me, and then I’d get all the paybacks for how I was as a kid. Mama wasn’t lying. Don’t get me wrong…she’s a sweet, precious angel baby. But OMG that strong-willed sassiness might be the death of this mama.
I still somehow manage to get dinner on the table every night, and usually not much past 6:30. I credit this mostly to morning meal prep and slow cooker meals. Here’s what we have on the menu for this week:
Sunday – Shepherd’s Pie with Sweet Potato Topping
Monday – Salmon cakes, salad (pea fritters for Nat)
Tuesday – Slow Cooker Creamy Tortellini Soup
Wednesday – Slow Cooker Creamy Chicken Taquitos
Thursday – Black Pepper Venison Stir Fry, Brown Rice
Friday – Southwest Turkey Burgers, sweet tater fries
Saturday – Wedding dress shopping with one of my bff’s then going to visit and stay at my parent’s house – so whatever deliciousness my mama cooks!
